This afternoon, I made a couple of loaves of Ice Cream bread for them to eat for breakfast before their trip to see the lions and tigers and bears...This is a very easy recipe that I got from my friend Linda Sayers. It makes a great gift. And again, it is very easy.
Ice Cream Bread
1 1/2 cups self-rising flour
1 pint ice cream (cannot be light or fat free)
Soften ice cream on kitchen counter for 30 minutes or so.

Blend flour and soft ice cream with wooden spoon.
Bake in greased loaf pan for 40 minutes at 350. Let cool and slice.

That's it. Really. I've used mint chocolate chip, butter pecan, and peanut butter cup. It's not as sweet as you would expect it to be. You could add a bit of sugar, or artificial sweetener (so that it won't affect the consistency), but I think it's better without a very sweet taste.
Wilson's fav is mint chocolate chip!

ReplyDeleteI tried the bread today. I can't believe this worked. I used B&J"s Dble Carmel Chunk,chopped up a small bannana(tossed in flour).It was great! It has these chocolate covered carmel cups in it,so it is a nice little bite of chocolate. Really cool! Thanx,Heather
