Pumpkin Balls

The most kid friendly recipe. Ever.

Stores often run low on spice cake mix this time of year. I can always find it at Walmart. Because it has all of the spices you need, don't buy the pumpkin pie mix. Get the "pure" canned pumpkin.

You can mix these two ingredients by hand unless you have children helping you. If that's the case, put the cake mix and the pumpkin in a large plastic ziploc bag.

Kids tend to lift ingredients out of the bowl and onto the counter when mixing anything that's not liquid. When mixing in a bag, everything is contained and the bag can be mushed up without a mess:

When all mushed up, cut the corner of the plastic bag and squeeze mixture out to fill up muffin cups. You can also make these into mini muffins.

You can bake and then use some sort of cream cheese icing (but they are very soft and it might be difficult to spread) or you can add sprinkles before you bake.

Or you can just eat the sprinkles.

Bake at 350 for 10-12 minutes, or until a toothpick inserted in the middle of a pumpkin ball comes out cleanly. They go really fast and are a great kids' activity!

  1. Hey Katherine! Those look amazing and so yummy. Continuing the pumpkin trend, I have a super easy dip that is delicious! It calls for 1 can of pumpkin, 1 container of cool whip, 1 package of dry vanilla pudding mix and as much cinnamon as you like. I sometimes use the low-fat or low-sugar alternatives and haven't tasted a difference. You mix all the ingredients and serve with vanilla wafers and/or cinnamon graham crackers. It's simple, sweet and relatively healthy!

  2. Hey that is one of our favorite recipes too! We just use a cookie scoop and put it directly on a cookie sheet. AWESOME... We also have a breakfast cookie version where you add one cup of oatmeal, 1/2 cup applesauce, and 1 mushed up banana as well as any nuts, seeds dried fruit or flaxseed you have lying about. Scoop with cookie scoop and press a little flat. We have found that as long as it is scoopable (mashed potato consistency) it tends to hold together well and also be delicious.

  4. I made these and they were delicious! I put some cream cheese icing in a plastic baggie and cut the corner and then piped on the icing. That seemed to work really well. I can't wait til you see/taste the desserts I'm making for Thanksgiving!!!
